Spatchcock Chicken Roasted with Lemon, Garlic, and Ginger Marinade

We all spend time on Pinterest pinning recipes, workouts, outfits….you name it. I make a lot of the recipes that I pin and figured I would start blogging about the Pinterest recipe wins since it’s hard to always nice to know how other people like the recipe, how easy it is to cook, and what tweaks they end up making down the road.

I pinned this recipe for Spatchcock Roasted Chicken from http://www.andhereweare.net on Sunday and I had to make it on Sunday since surprisingly I had all the ingredients on hand which NEVER happens.

I only had frozen 6 boneless chicken breast so the modifications I made are: doubled the marinade, added 1/4 cup water and cooked it on high for 3 hours in my crockpot and it was FANTASTIC and beyond easy to make. Seriously so easy and it was a family dinner WINNER!!! This recipe sounds and tastes like it is far too complicated to make but I will tell you the hardest part of this recipe was me trying to get the stupid crockpot liner to stay on and that was self inflicted because you are suppose to cook this in the oven. My father and hubby are red meat an potato guys and both really liked this recipe!
