You are probably thinking what the heck is this post going to be about! Well, this post is about the dreaded B word in our house, BUDGET, and me finding new uses for sweet potatoes because our family budget is TIGHT this month. I know a lot of you can relate!
The hubby and I slacked last month in our budget meetings and over spent on snowboarding trips. We had a lot of family fun BUT it’s now time to be adults again and crack down on the budget.
Food / Groceries is always a large number for us; around $500 a month for the 3 of us (2 adults and 1 tween boy). We are going to set our budget at $350 this month!! If I am going to make that work I have to find uses for everything we currently have in the house.
I have about 2 pounds of sweet potatoes to use and I was trying to find something different for lunch and came up with this shredded mexican sweet potato and black bean hash yumminess! I am going to preface this with this recipe is beyond easy and simple. I’m not a fan of cooking so whatever I make it’s super simple.
1 medium sweet potato peeled
1/2 yellow onion
1 can black beans
Cumin to taste
Chili powder to taste
Red pepper flakes to taste
1 tsp coconut oil
I put the pan on medium heat to warm it up while I peeled the sweet potato. Once it was peeled I put it in my vegetti and used the thick side to shred it. I then diced up 1/2 the onion, opened up the can of black beans and rinsed them. I then melted the coconut oil in the pan then threw everything in the pan, added the spices (I just do it to taste so no exact measurements, sorry).
It was AMAZING! I had 2 servings for lunch with a little cheese but no added protein. I had some left over for this morning that I scrambled some egg whites and heated up the shredded mexican sweet potato hash and it was even better!
